fresh fruit and cookies!

I am always relaxed by both gardening and baking. Sharing the abundance of the garden and of baking is always a good way to enjoy them both!

Here is the recipe and pic of both from today. What helps you relax? If you are interested in cooking or baking, let me know. Will be doing some Zoom classes, let me know if you are interested in learning how to make something! We can make it together over Zoom, or hopefully soon in person!

Peanut Butter Oatmeal Chocolate Chip Cookies

1/2 c. unsalted butter

1/4 c. white sugar

1/2 c. of brown sugar

1/2c. of peanut butter

1 egg

1 tsp of vanilla extract

1/2 tsp of baking soda mixed with 1/2 tsp of hot water

2/3 c. of oatmeal

2/3 c. of all purpose flour

Preheat oven to 350 degrees F.

Line 2 baking sheets with parchment paper. Set aside.

Mix together butter and sugars, until light yellow color.

Add peanut butter, egg, vanilla extract and baking soda.

Add flour, and oatmeal.

Mix until combined.

Using a small ice cream scoop place mixture on parchment paper, about 2 inches apart.

Place in oven and bake for 4 minutes, then rotate the pans and bake for another 4 minutes, or until golden brown.
